I love piano pieces and there are some really good VG piano pieces out there.
Here's a couple of my favourites:
Ahto City - Knights of the Old Republic
An End Once and For All - Mass Effect 3
Room of Angel - Silent Hill 4: The Room
Fi's Farewell - Skyward Sword (There's also this - Fi's Gratitude)
Honorary mention: Secure Place - Resident Evil 2 (on which my track Unsecure Place was based upon :P)

I didn't forget about it, I just wanted to save some stuff for later additions to the thread! Haha. Same goes for the piano version of Sonata of Healing. :)
In what way does Attack fit here!? Haha. To Zanarkand was nice. Never played the FF series but they seem to have some really good music.
Listening to the top 10... He's included Fi's Gratitude, yay! It's so wonderful.

Although there is a lot of other orchestration going on, the piano is very present in the song, and it's really the lead. If you only include piano solos, then your favorite Fi's Farewell/Grattitude doesn't belong here either.
But so you won't get your panties in a bunch, here's the Piano version that was released in a piano collections soundtrack from the game. It's quite popular on youtube, with a good number of people with their take on it.
