I'm wondering if anyone has a recommendation or two for a free VST that can produce a highly realistic acoustic piano sound?

There isn't any! Best you can do is get something like 'The Grand' which is sample based. quote:

Hey there! If you use samplers and you want the M1 Piano sound, check out this:
http://www.failedmuso.com/blog/?p=431 (You can find the multisampled piano in EXS24 format) And if you use FL Studio you can load this piano using DirectWave plugin! I think it exists also a VST plugin with the M1 piano, but I don't remember where it is, it was the Cubic s1 Piano.
