http://djbb.dk has all the elements you'll need for breaks beats. lots of small snares to spice them up etc.

It takes time and loads of trial and error to make a perfect breakbeat. God ask any of the guys who actually releasae these tunes and they will tell you the same but once you get it then it will come flooding out of your pc.

the basic setup is pretty easy.
kick, snare, closed hihat.
get these three samples and you're set to go.
have a look at drumnbass, and you'll notice the following:
Kick
pause
snare
pause
pause
kick
snare
pause
there, now try replacing pause with a closed hihat.
voila, a start.
next thing you wanna do is "ghost snares".
this is basically what makes a breakbeat cool.
it's supposed to be right after every closed hihat, but before the next sound.
try reverbing this, sample it, cut it up, and put the samples back into the song.
you should do this cause reverbs are usually realtime, and if you have a recorded reverb you get a kick with a reverbed snare, and so on.
try it out, it works, is fairly easy done, except for the ghost snare part, which is a pain in the behind!
