For years I've constantly been on the look out for this stab-like synth that's been used in many historical Catalan hymns such as these being some of them (videos aren't playing in preview so if they arent for you please let me know);

if you remove the "http://www.youtube.com/watch?v=" part of the links inside the YOUTUBE tags, they will work
but at least you posted the links aswell so it's not a complete waste :P

The off beat stabs sound like hoovers. A modern vst synth that can make propper hoovers, aside from ReDominator (and is actually more flexible) would be Sylenth1. Bring down the release on the amp enevelope for that quick choppy sound. And when you get a combination of parameters you like, save it as a sample!
Just like kicks can be an adventure in finding the right one, I'd say the same applies to hoovers. At least for me it has! :)
